Pork Tenderloin
This is a very quick and easy recipe for those nights that you just don’t feel like cooking. Although the recipe below calls for Grit 44 we have used both 45 and Snakebite and they all taste amazing.
2 lb Pork Tenderloin
1 Tbsp Canola Oil
1 Tbsp (heaping) Grit 44
Preheat the oven to 400
In a small bowl combine oil and Grit 44 to make a paste.
Line a baking pan with tinfoil (we use an 11x7). Cut tenderloin in half lengthwise and place in baking pan.
Rub tenderloin with paste. Let sit for 10 minutes.
Turn oven to Broil and put baking pan on top rack. Cook for 5 minutes.
Flip and cook for another 8-15 minutes.
Remove when internal temperature is at 125 degrees.
Tent with tin foil and let rest for 10 minutes.
