Hot Day Cold Chicken Salad Sandwich
This is very easy and delicious that can be made with Grit 44, Grit #45, Snakebite 46, All three, or whatever your taste wants. This cold recipe is awesome in the summer and very easily adjusted to make as much as you want and is even better when eaten the next day as leftovers!
Ingredients:
3 Boneless/ skinless chicken breasts or thighs.
3 or 4 strips of bacon
3 celery stalks
3 fresh green onions (scallions)
3-6 grape tomatoes
3-4 heaping tablespoons of mayonnaise
a dash (plus) of lemon juice.
1-3 tablespoons of Grit 44, Grit #45, or
Snakebite 46
Bread of choice
Recipe: Serves 4-5
Season up chicken with one or all of Grit 44, Grit #45, or Snakebite 46. Season to taste. Let them sit between 30 minutes and a few hours for seasoning to soak in. Keep refrigerated if necessary.
Grill the chicken and cube them into 1/4” or smaller chunks. Shredding the chicken works as well. Your choice. Set Aside.
(No grill, No problem! Cube chicken and cook in a pan on the stove. Cubed chicken cooks fast. To prevent sticking add a bit of olive oil as needed.)
Cook bacon to desired preference and chop into bits. Set aside.
Chop up a celery stalks, a green onions (scallions), and slice grape tomatoes.
Combine cubed chicken, chopped bacon, and veggies and add a few tablespoons of mayonnaise. Add a dash of lemon juice. Stir it up thoroughly.
Taste. Add more mayo, lemon juice, salt, pepper, and/or any of the Grits that you like. Stir it up again.
Refrigerate until the whole thing is cold.
Serve on your choice of roll, croissant, bun, or bread.
Sides: Raw veggies, french fries, cole slaw, whatever!
